This is a large-volume prepared mix which is loaded with the flavours associated with holiday season, which makes it perfect for hosting a festive gathering. Save the extra citrus syrup to use in breakfast cocktails, sweets, or to make additional servings of this cocktail.

Yields 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Put the listed items into a pot, heat until it reaches a simmer, stirring to dissolve. Then, remove from the stove allowing it to cool down fully. Decant into an sealable bottle, cap it keeping it in the fridge, it will last for up to four weeks.
For the Cocktail Base: Pour all the liquid ingredients into one large bottle, allow it to infuse for one hour, then filter it best through muslin, so it's completely strained.
When ready to serve: Pour 85ml from the batch mix into a cocktail shaker packed with ice, and agitate gently for one minute to chill. Pour to a chilled martini glass or a similar vessel, decorate with the cranberries and complete it by giving it a light spray of mandarin oil over the top.
